Barbecue Sauce

Ingredients

1 tbsp brown sugar
1 tbsp soy sauce
1 tbsp malt vinegar
1 tbsp corn flour
  tomato purée
450g tin chopped tomatoes
1 pinch chilli
250 ml water
large onion, chopped

Method

  1. Fry the onion, until soft and golden.
  2. Mix the corn flour with a little of the water to make a paste.
  3. Add all the ingredients to the pan, with the onions.
  4. Bring to the boil and simmer until the flavours are nicely mixed.

Glazed Ham

Ingredients

1 ham
glazing
ingredients
orange juice, brown sugar, mustard, maple syrup, spices, etc.

Method

  1. Cover the ham with water (or a mix of other liquids such as juice, cider, etc.) and boil for 40 mins per kg.
  2. Take out of the fluid and drain for 10 mins.
  3. Heat up the oven to <span class="temperature">200°C</span>.
  4. In a pan or microwave, heat up the glaze ingredients.  (Don’t expect it to taste good at this point.)
  5. Cover the ham with the glaze.
  6. Roast in the oven for 45 mins, basting every 10 mins until cooked.
  7. Eat hot or cold.

Moon Rocks

Ingredients

90 g butter
90 g brown sugar
½ tsp mixed spice
125 g raisins
250 g self raising flour
1 egg, beaten

Method

  1. Set the oven to 200°C.
  2. Rub the butter into the flour until it looks like breadcrumbs.
  3. Add in the sugar and raisins.
  4. Mix well, then add the beaten egg.  Stir together until it is mixed enough to squeeze into a ball.
  5. Grease a baking tray and make the mix into 8-12 small heaps.
  6. Cook in the oven for about 15 mins.

Eat when cool enough (but ideally still warm).
